Here's a little envelope album I've been working on for a class at the store where I teach. If you've never attempted one, they are fun and easy to make! I used paper and die-cuts by My Mind's Eye to give the album a cohesive look and feel.
There are actually a few different kinds of envelope albums. One type is an accordion-type album, where the flap of one envelope is attached to the next one, allowing the envelopes to fold up like an accordion. Instead of an accordion, this one is more like a pocket or mini-album, with openings on the side.
You can make an envelope album out of any size envelopes, even tiny coin envelopes. The concept is simple: You seal the envelopes, then cut off one side of each to make a pocket. You cover the envelopes with cardstock or patterned paper, then hook them together somehow -- I used little strips of cardstock. (If you've ever made a tag book, the concept is very similar.)

As you can see from the photo above, the envelope pockets each hold a pull-out photo/journaling mat.
